* 40 ml STIN Sloeberry

* 30 ml Fresh strawberry purée

* 20 ml Fresh lemon juice

* 10 ml Simple Syrup

* 1 Egg white

* 50 ml Soda

* Ice cubes

 Shake all ingredients (except soda) in a shaker with good ice forcefully. Strain into a longdrink glass with fresh ice and fill with soda. Scent with a lemon zest and garnish with a strawberry chip or a fresh strawberry.

Bartender tip:

Mix all ingredients (except soda) with a hand blender before you shake them – this replaces the Dry Shake – to get the perfect foam.
